I get the most requests to make this dip and Its a huge success every time!!!!
It's great served with your favorite crackers and or tortilla chips!
- Prep Time : 15 minutes
- Cook Time : 25 minutes
- Yield : 2 1/2 c
Prepare the red beans and rice as directed on the box.
While the rice is cooking, take the seeds out of the jalapenos, or if you like it really spicy, leave some of the seeds in, chop up the jalapenos and small dice the onion and set aside.
Once the rice has cooked, place it in a blinder along with the salsa and jalapenos and blend until smooth.
When the rice, salsa and jalapenos are blended well, pour the dip into a serving dish and add the onions and the cheddar cheese, mix well and top with the pepper jack cheese.
Serve with your favorite cracker and or tortilla chips and then ENJOY!!!!!!!!!!!!
