Red Velvet Cheesecake Cups Recipe

  • Preheat oven to 350*F  degrees.  Line 8 cup muffin tin with liners.

Prepare filling first. 

  • In Bowl beat together softened cream cheese and sugar.
  • Add egg and vanilla, stir until smooth and set aside.


  • In a second bowl thoroughly stir together flour, cocoa powder, baking soda and salt.
  • In third bowl, stir together oil, sugar, vinegar, egg, red food coloring, vanilla and sour cream.
  • Add the flour mixture (bowl 2 with bowl 3), stir until well blended.
  • Measure out approximately 1/3 cup red batter and set aside.  Divide the remaining red batter among the 8 muffin tins. (each should be a little over 1/3 full)
  • Spoon cream cheese filling mixture over the red batter, dividing evenly between all tins.
  • Drop small spoonfuls of reserved red batter on top of cream cheese filling mixture, making a bulls eye pattern.
  • bake 20-25 minutes.  Let cool on wire rack.
  • carefully remove cheesecake cups from the pan.
  • chill 30-45 minutes
  • garnish with white or dark chocolate shavings
